Aloha Pork Chop Skillet

This is a recipe that I actually found on The WW Chick.  It is so good, and it makes four servings, so you can eat it throughout the week.  Another plus is easy cleanup!  It is all done in one pan!

Aloha Pork Chop Skillet

Ingredients:

  • 4 (4oz each) pork chops, thin cut & lean
  • 2 tsp olive oil
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper cut into chunks
  • 1 orange bell pepper cut into chunks (The recipe didn’t call for this but I had one laying around and thought I would toss it in there.)
  • 2 – 8 oz cans unsweetened pineapple chunks
  • 1/2 cup fat-free chicken broth
  • 1/4 cup Fat Free Catalina Salad dressing
  • 3 cloves of garlic, minced (The recipe actually calls for 4, but I am not a big garlic person.  Adjust it to meet your needs)
  • 2 cups instant whole grain brown rice, uncooked.

Directions:

  1. Heat oil in large non-stick skillet, medium high heat.  Add chops; cook util browned on both sides.
  2. Add peppers, pineapple with juice, broth, dressing, and garlic; mix well.  Bring to a boil.
  3. Stir in rice and cover.  Reduce heat to low & simmer for 5 minutes.  Take off heat; let stand for 5 minutes.

One serving is 10 points and includes 1 pork chop and 1 cup of the rice mix.

I know that 10 points is a lot, but it is so filling and absolutely delicious!

Fresh Strawberries with Lime Custard

This was the most amazing dessert.  I was a bit concerned when I read it, but it turned out great and is super easy!!

  • 8-ounce container nonfat sour cream
  • 1/2 cup fat-free sweetened condensed milk
  • 1/2 teaspoon grated  lime rind
  • 1 1/2 tablespoons fresh lime juice (I used one lime)
  • 3 cups sliced fresh strawberries

So here’s what you do!

  1. Combine sour cream, sweetened condensed milk, grated lime rind, and fresh lime juice.
  2. Spoon 1/4 cup lime custard into a dessert dish.  Then put 3/4 cup strawberries, follow it up with 2 tablespoons lime custard.

Makes four servings and is only 3 points.  I would have taken a picture but we ate this up!

{You can use any berry that you want…and you can use lemon or orange rind and juice instead of the lime}

Yummy Salad

yummy 002I did half and half spinach and spring mix, half a grilled chicken breast, quarter avacado, 1/3 c weight watchers cheese, tomatoes, onion, and one slice of turkey bacon, and a hard boiled egg and of course two tablespoons of fat free ranch dressing!!  So yummy!!  It is 10 points but if you’re in the mood for a very tasty salad!

Ready or not…

School starts in exactly one week.  I have spent my summer interning, working, took a class, and working some more.  I didn’t get a vacation.  My internship is over on Wednesday *WOO* and I will be heading down to Nashville, TN, for a weekend of good times with some of my closest friends/family.

So, since I am heading down either Thursday evening or Friday night, I have decided to set some goals for the weekend.

  1. Bring my own snacks.  I tend to do better on my diet when I am able to snack.  Providing my own will help keep me focused.
  2. Go for diet drinks.  This is my downfall, whenever I go on a diet I have to stop drinking soda completely.  Mainly because I hate diet soda.  It’s one of those things once you start, you can’t stop.  So if we’re go out, I will opt for diet instead of regular.
  3. Find some time to excercise.  Thankfully Nashville is one of those towns that everything is lumped together so you walk everywhere, that will help.  I am going to put together a “plan” of excercises that I could do while I am there.
  4. Remember portions.  The biggest thing that I am changing is my portion control.  If I can do that, especially when I am out, I think I will be good.
